Honey Fried Walleye

A mild fish like walleye really doesn’t need a lot of heavy seasoning. Using honey gives it a touch of sweetness without overwhelming the taste of the fish. Mix some of the honey in the egg, then drizzle more honey on the filets immediately after removing then from the frying pan to create a honey “glaze” on the fish. Serve with a side of wild rice or pasta and some garlic bread. If you can find it, buy locally produced honey. It’s great for people with outdoors allergies like hayfever. Ingredients:

  • 4 walleye fillets
  • 2 eggs
  • Half Cup milk
  • Half Cup honey
  • 1 Cup flour
  • 2 sleeves of Saltine crackers
  • Half Teaspoon salt
  • canola oil

Cooking instructions:

  1. Beat 2 eggs, milk and 2 tablespoons of honey in a mizing bowl
  2. Crush up saltines and miz in salt and flour
  3. Cut the walleye into small chunks
  4. Put a half inch of oil in a frying pan and heat to around 350 degrees
  5. Dunk the walleye chunks in the egg/honey mixture, let soak for 5 minutes
  6. Remove walleye chunks and dredge in the crushed saltine mixture
  7. Fry the walleye for 4-5 minutes per side, or until it flakes
  8. Remove the walleye chunks from the oil, place on paper towel and drizzle honey over them
  9. Serve with sides of choice
