CRAPPIE CAKES
Ever had crab cakes? These are better. Same basic idea, but we use fresh crappie filets, and our secret ingredient. This one is off the hook (no pun intended)! It’s easy and DELICIOUS.
Ingredients:
- 1 Pound fresh crappie fillets
- 3/4 Cup bread crumbs
- 1 egg
- 1 Teaspoon Coughlins seafood spice
- 1/4 Cup finely chopped red bell peppers
- 1/4 Cup finely chopped onions
- dash worchestershire sauce
- 1/4 Cup mayonnaise
- 1 Teaspoon dry mustard spice
- half stick of butter
- 1 Tablespoon olive oil
Cooking instructions:
- Dice onions and red bell peppers
- Combine ingredients into mixing bowl (not the oil and butter)
- Hand mix ingredients, then form patties (should make 4-5 patties)
- Heat oil and butter in black iron skillet
- Place patties in skillet, and reduce heat to medium
- Cook patties 7-9 minutes per side (depending how thick they are)
- Serve over lettuce with a nice roumelade or mustard-based sauce
